lemon garlic roasted asparagus !

What You'll Need

  • 1 bunch asparagus $2.49
  • 1 Tbsp olive oil $0.11
  • 1 clove garlic $0.07
  • 1 med lemon $0.49
  • to taste salt and pepper $0.05

How to Make It

  1. Preheat the oven to 400 degrees. Rinse the asparagus well and cut off about one inch off the bottom of the stems (this part tends to be very fibrous and stringy).
  2. Place the asparagus on a baking sheet lined with foil and drizzle with olive oil. Mince the clove of garlic and zest the lemon. Sprinkle salt and freshly ground pepper over the asparagus, add the garlic and half of the lemon zest. Toss everything with your hands until everything is coated in oil and seasoning. Spread the asparagus out so they are in a single layer on the baking sheet.
  3. Place the asparagus in the oven. After ten minutes in the oven, use a spatula to stir the asparagus and then roast for ten more minutes. After twenty minutes total, the asparagus should be tender and even a little crispy on the tips.
  4. When the asparagus come out of the oven, sprinkle the remaining fresh lemon zest and just a little lemon juice.

Homemade BBQ Chicken Pizza !

  • 1/2 recipe homemade pizza crust
  • 1/3 cup + 2 Tablespoons your favorite BBQ sauce
  • 1 cup cooked, sliced chicken breast (about one 8-ounce breast)
  • 2/3 cup shredded mozzarella cheese
  • 2/3 cup shredded smoked gouda cheese1
  • 1/2 small red onion, thinly sliced

  2. Toss 2 Tablespoons of BBQ sauce with the cooked, chopped chicken to coat it. Set aside.
  3. After waiting 15 minutes as described in step 11, top the crust with the BBQ sauce. Add more or less BBQ sauce depending on your taste. Then layer on the shredded mozzarella, then the BBQ-coated chicken, shredded gouda, then the onion slices. Bake for 14-16 minutes. For the last minute, I move the oven rack to the top rack to really brown the edges. That's optional.
  4. Top hot pizza with fresh cilantro. Slice pizza and serve immediately. Store leftover pizza covered tightly in the refrigerator and reheat as you prefer. Baked pizza slices may be frozen up to 1 month. Please see homemade pizza crust recipe for how to freeze the pizza dough.

    6. For the Caramel Sauce:

    7. Over a high heat, bring the coconut milk, sugar and maple syrup to a boil, then immediately reduce to a low simmer. Continue to simmer for 15-20 minutes, stirring every so often.

Chewy Chocolate Cookies with Peanut Butter Chips

    What You'll Need

    • 2 cups sugar
    • 1 1/4 cups (2 1/2 sticks) butter or margarine, softened**
    • 2 eggs
    • 2 tsp. vanilla
    • 2 cups flour
    • 3/4 cups cocoa
    • 1 tsp. baking soda
    • 1/2 tsp. salt
    • 1 2/3 cups (10 oz. package) Reese’s Peanut Butter Chips
    • optional: substitute 2/3 cup of the Peanut Butter Chips for white chocolate chips
    • :o To those of you who are opposed to margarine, consider letting this recipe be an exception. It’s the only recipe I use it in– I think it makes for a better-textured cookie than butter.

    How to Make It

    1. Preheat oven to 350 degrees.
    2. In a medium bowl, sift together the dry ingredients (flour, cocoa, baking soda, and salt).
    3. In a large bowl, cream together the butter and sugar. Beat until fluffy, then mix in the eggs and vanilla. Gradually add in the flour mixture.
    4. Stir in the peanut butter (and white, if using) chips.
    5. Drop by heaping teaspoon-fuls onto an ungreased cookie sheet. Bake for 8 to 9 minutes. (Do not over bake them! They’ll puff up while baking and be quite soft still when they’re done, and they flatten as they cool.)
    6. Let the cookies cool a little, transfer them to a cooling rack, then let them cool completely.

Eggs in Hash Brown Nests !

    What You'll Need

    • 6 whole Medium Russet Potatoes (6 To 8)
    • Salt And Pepper, to taste
    • 24 whole Large Eggs
    • Non-stick Cooking Spray

    How to Make It

    1. Preheat the oven to 400 degrees.
    2. Bake the potatoes until almost tender (potatoes should still have a little bite) 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.
    3. INCREASE OVEN TEMP TO 425 DEGREES.
    4. Spray two muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin cup. Use your fingers to gently press the sides and bottom in each muffin hole to make a nest (don't press the potatoes firmly against the pan; they should sit lightly in the pan.) Spray again (very lightly!) with cooking spray. Bake for 15 to 20 minutes. Watch and make sure they do not burn. (If they seem like they're not browning, kick up the temp to 450.) Remove when the nests are golden brown.
    5. Allow the nests to cool. Crack an egg into each one. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes. Don't be concerned if some whites bake differently; no two nests will look alike!

    ♥ Oktoberfest Stew And Shiny ! ♥

    What You'll Need

    • 1 tablespoon olive oil
    • 1 (14 ounce) package beef smoked sausage, cut into bite-size slices
    • 1 ½ onion, sliced into thin semi-circles
    • ½ head small cabbage, halved again, cored and thinly sliced
    • ½ teaspoon freshly ground black pepper
    • ¼ teaspoon ground caraway seeds
    • • Pinch salt
    • 2 cloves garlic, finely chopped
    • 1cup German-style lager beer (Oktoberfest variety)
    • 2 russet potatoes, peeled and cubed to bite-size pieces
    • 2 ½ cups hot chicken stock
    • 1 ½ tablespoons apple cider vinegar
    • 1 tablespoon flat-leaf parsley, chopped

    How to Make It

    1. Place a medium-large pot over medium-high heat, and add the olive oil; once the oil is hot, add in the sliced beef smoked sausage, and allow the slices to caramelize and brown in the oil, for about 4-5 minutes; once the sausage is browned, add in the sliced onions, stir, and allow the onions to caramelize with the sausage for another few minutes, until golden-brown and softened; once onions are caramelized, add in the sliced cabbage, stir to combine, and allow the cabbage to soften and take on the flavors of the sausage and onions for few minutes; once the cabbage is softened and golden, add in the black pepper, ground caraway seeds and the pinch of salt, and stir to combine; next, stir in the garlic, and once it becomes aromatic, add in the cup of lager, and stir the mixture to combine; allow the beer to slightly reduce for about 3 minutes or so; next, add in the cubed potatoes and the hot chicken stock, stir, and allow the mixture to come to the boil; once it comes to the boil, place a lid on (slightly askew to allow just a little steam to escape), and reduce the heat to low to gently simmer the stew for about 40 minutes; after the 40 minutes, turn the heat off, and finish the stew by stirring in the apple cider vinegar and the chopped parsley (add more salt if necessary, too).
